Delicious Meatless Monday Recipe: Cheesy Chipotle-Cauliflower Mac

Limiting meat in your diet offers numerous health benefits (especially cardiovascular health benefits), but it’s challenging to change eating habits.  If you are looking for a tasty and satisfying meal for Meatless Monday, try this Cheesy Chipotle-Cauliflower Mac! It’s packed with flavor and nutrients, making it a perfect choice for a meat-free dinner.

Ingredients:             

  • 1 medium cauliflower, cut into florets
  • 8 oz whole wheat macaroni
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce, minced
  • 2 cups shredded cheddar cheese
  • 1 cup milk (dairy or plant-based)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Cauliflower and Pasta: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 5-7 minutes. Remove with a slotted spoon and set aside. In the same pot, cook the macaroni according to package instructions. Drain and set aside.
  2. Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3-4 minutes. Stir in the minced chipotle pepper and cook for another minute.
  3. Make it Cheesy: Reduce the heat to low and add the shredded cheddar cheese and milk to the skillet. Stir continuously until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
  4. Combine and Serve: Add the cooked cauliflower and macaroni to the skillet, stirring to coat everything evenly with the cheese sauce. Cook for an additional 2-3 minutes until heated through.
  5. Garnish and Enjoy: Transfer the Cheesy Chipotle-Cauliflower Mac to serving bowls and garnish with chopped parsley. Serve immediately and enjoy your delicious Meatless Monday meal!
